Most enjoyable moment in Lund: snow-sliding!

Went snow-sliding today with grace, jerald, don, william and sharon at a slope near to Delphi hostel. William brought garbage bags for us to slide down. He's super welfare sia. hee. Anyway it was a very thrilling experience. We went up and down many times and tried various formations of sliding down. We linked hands in a horizontal formation and hooked legs in a vertical formation. Superduper fun. Somehow it's quite easy to lose control and I ended up rolling face-down on my stomach mid-way down the slope a few times. My down-jacket was quite short and I ended with two bruises on my hip. haha! but it was worth it. After my last slide, I stood up and giggled happily with Sharon at the bottom of the slope. Within a few seconds, I was on my bum again! William had crashed into me!!! OUCH!

This was my most enjoyable moment here in Lund. ;)

Swedish nut cake!

Made Swedish Nut Cake with Carol on Sunday night for dinner/supper. It didn't turn out that well. I suspected it was something to do with the baking soda. googled the difference between baking soda and baking powder (what we used since there was no baking soda) and realised there's a difference in strength. I made it again for the rest for dinner today. This time I didn't follow the recipe portion cos the measuring cup had mysteriously disappeared. I just wacked the ingredients. But it turned out decent! Yae! Baking is fun here since all the utensils and oven are available. I don't know why it's called Swedish Nut Cake when it's not a Swedish cake. My swedish neighbours have never heard of it before and it's made of pineapple when pineapple is in scarce supply here. Hm. Who cares, it's nice and easy to make.

INGREDIENTS:
2 cups white sugar
2 cups all-purpose flour
2 eggs
1/2 cup chopped walnuts
2 teaspoons baking soda
2 teaspoons vanilla extract
1 (20 ounce) can crushed pineapple with juice

1 (8 ounce) package cream cheese
1 3/4 cups confectioners' sugar
1/2 cup chopped walnuts
1/2 cup butter
1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a large bowl, mix flour, sugar, 1/2 cup nuts and baking soda. Add eggs, pineapple and 2 teaspoons vanilla . Beat until smooth and pour into 9x13 inch baking pan.
Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes. Spread icing on hot cake.
For the icing: In a large bowl, cream butter or margarine, cream cheese, 1 teaspoon vanilla and confectioners sugar until light and fluffy. Fold in 1/2 cup nuts. Spread on hot cake.


Next up: Warsaw- Prague- Budapest with Sharon after the exams. Crap I think I will begin to feel stingy in Sweden after the trip. After coming back from Finland, I think Sweden is cheap and I started spending much more. Currency syndrome. Hehee.

Fell down that day while jogging and injured my knee. My jogging pant got torn and is now holely at the knee area. :( Luckily I was wearing long john inside. Though my long john was not torn, I still had a wound and some minor scratches. I can't wait to jog again!!!

Had braised pork and egg by william for dinner. It's heavenly! ;) Food that I truly miss here: breadtalk charsiew bao, teahouse charsiew bao, pastry with charsiew. :
